Garlic miso butter braised turnip greens

This braised turnip greens in caramelized garlic miso butter was actually a happy accident. I was trying to think of a creative way to use the turnip greens I had left in the fridge. Struggling to think of something off the top of my head, I looked in the fridge for other ingredients I might utilize. It hit me right in the face. No, not literally. I saw miso paste and thought, why the hell not?

A new recipe was born.

Miso is a very unique flavor, I get it. This might be very different for your taste buds, especially if you’re accustomed to specific southern flavors, but I really enjoyed this and think it works quite well. I served the turnip greens with rice and roasted chicken breast, but I give some alternatives below.

How long should I braise the turnip greens?

I had the greens cooking for about 20-30 minutes total, because I like when they still have a little bit of a bite to them. Anything longer than that, and they become mushy. This is common in southern style greens, but it’s not something I prefer. Of course, you can braise them for longer if you’d like to get a deeper flavor. Either way, the braised turnip greens will be packed full of flavor.

What protein pairs well with the braised turnip greens in miso garlic butter?

I served the greens with brined and roasted chicken breast, but both fried and blackened fish or chicken would also go really, really well with this. You can also serve this with a side of cornbread, or even grits. This really is a versatile side that can pair well with many types of ingredients. There are BBQ places in Atlanta that also serve its own style of braised greens, so it’s not limited to what I recommend.

Garlic miso butter braised turnip greens

These braised turnip greens in caramelized miso butter makes for a great savory side dish for any southern style course.

Ingredients

  • 1 tbsp vegetable oil
  • 1/4 onion chopped
  • 3 garlic cloves chopped
  • 1 tsp cornstarch
  • 1 lb turnip greens
  • 1/4 cup stock of your choice
  • 1 tbsp miso paste
  • 1 tbsp soy sauce
  • 1 tbsp butter

Instructions

  • Heat a pot on medium-high heat and add the oil when the pot is ready. Saute the onion and garlic for about 3 minutes. Add the cornstarch and give it a good mix.
  • Next, add in the turnip greens and saute until they become vibrant, about 3-5 minutes. Add the stock and cover. Let simmer for about 5 minutes. Mix in the miso paste, soy sauce, and butter and cook until they are to your liking, but at least another 3-5 minutes.
  • Serve with any protein you wish. Fried or blackened chicken or fish would be an excellent pairing.
